Vegane Frikadellen
- 275 g veganes Hack (ich nehme das Next Level Hack von LIDL, weil es am Besten schmeckt)
- 1 Zwiebel klein gewürfelt
- 1 Brötchen (frisch oder alt – geht beides gut)
- 1/2 Bund Petersilie gehackt oder 2 EL TK Petersilie
- 1 – 2 TL Senf (ich mag mehr)
- Salz und Pfeffer
- 1/ Zehe gepressten Knoblauch wenn man mag
- 1/2 TL Paprikapulver edelsüss
Zusätzlich entweder
- 1/2 EL Speisestärke
- 40 g Paniermehl (Konsistenz checken, falls zu weich, vorsichtig etwas mehr Paniermehl unterarbeiten)
- 1 TL Tomatenmark
Oder alternativ (nicht vegan, aber vegetarisch)
- 1 Ei von den Hühnern des Nachbarn 🙂
- eventuell etwas Paniermehl
Außerdem
- Bratfett / Öl / Butter (nicht vegan) zum Braten
- wenn man mag, kann man noch Chili oder andere Kräuter hinzufügen
Zubereitung
- Zwiebel schälen und fein würfeln. Um es schneller zu machen, könnt ihr auch vorgewürfelte TK Zwiebeln nehmen. Petersilie waschen und fein hacken. Auch hier könnt ihr, um Zeit zu sparen TK Petersilie nehmen. Ich würde 1/2 Päckchen probieren und gegebenenfalls mehr hinzufügen. Das Brötchen vom Vortag zupft ihr einfach ziemlich klein.
- Das vegane Hack, Brötchen, Zwiebeln, Petersilie, in eine Schüssel geben und mit den Händen gut verkneten. Anschließend fügt ihr Senf, Paniermehl, Tomatenmark, die Stärke und das Paprikapulver hinzu und vermengt alles. Würzt die Hackmischung mit Salz, Pfeffer und wenn ihr mögt Muskat oder zB. etwas Chili.
- Falls ihr lieber mit dem Ei arbeiten möchtet, lasst die Stärke weg und fügt das Ei stattdessen hinzu. Ist die Konsistenz zu flüssig, könnt ihr etwas Paniermehl hinzufügen. Nicht zu viel, sonst werden die Buletten zu fest.
- Nun könnt ihr je nach Größe 4-6 Frikadellen formen. Oder zB. 10 kleine Hackbällchen. Wenn ihr mehr braucht, erhöht einfach die Zutaten. Erhitzt das Fett in einer Pfanne. Mittlerer Hitze reicht aus, sonst verbrennen die Frikadellen und sind innen nicht fertig. Bratet sie ca. 6-8 Minuten von beiden Seiten an, bis sie gebräunt und knusprig sind. Ihr könnt sie auf Küchenpapier abtropfen lassen und dann direkt servieren.
- Sie schmecken toll zu Kartoffelpüree und Kohlrabi Gemüse oder zu Möhrendurcheinander. Mir schmecken sie auch super kalt, mit etwas Senf.
Ich würde Euch gerne ein schickes Foto von den Frikadellen zeigen, aber dazu habe ich sie viel zu schnell verputzt. Foto folgt also, wenn ich sie nächstes Mal zubereite. Wollte Euch aber nicht so lange auf das Rezept warten lassen. Dafür dürft ihr mir beim Aufessen der letzten Bulette zuschauen. 😉
